While specializing in the field of health and nutrition, he became a Certified Diet Counselor through study at the Institute for Educational Therapy (IET) in Cotati, California. In addition to his teaching, Mr. Barbee enjoys speaking to groups concerned with the relationship of diet to health and disease.

Dorie Byers is a graduate of Indiana State University and a member of Sigma Theta Tau nursing honorary. She received her certificates in Master Gardening and Advanced Master Gardening through the Purdue University Extension Service and has spent many years growing herbs and researching their uses. She has certificates in Herbal Medicine through the Herbal Healer Academy and The School of Herbal Medicine. She has also published Herbal Remedy Gardens (Storey Communications, Inc.), and she is a contributor to and co-editor of Taste Life!

John Croft

John Croft, LRSC, MRSNZ, FRSH, is a marine scientist, health product researcher, and lifelong lover of the sea. He has served as Research Director/Consultant of McFarlane Laboratories/Healtheries of New Zealand for the past 31 years. His previous writings include: Relief From Arthritis: The Natural Way (HarperCollins, 1987) and Nutrients For Health: The New Zealand Green-Lipped Mussel (Thorsons, 1996).

Brent Davis, DC, has practiced integrative holistic medicine for 22 years and is internationally recognized for his research and education in herbal therapy. Marie Demers, Ph.D.

Marie Demers, Ph.D., has worked as a health researcher for the past twenty-five years. As an epidemiologist, she has been involved mainly in primary care research, where a large part of the health problems are clearly preventable throug the adoption of healthier lifestyle habits. Her bacground in psychology, biology and anthropology has taught her that the environment plays a key role in developing these habits. A resident of picturesque Quebec, Dr. Demers' extensive readings and worldwide travels have given her a a priveleged observer role in making the case for a more walkable environment.
